Pie Pastry

This pie pastry goes well with numerous pies and creates a good and malleable crust! We mostly recommend sweet pies with this but you can do savoury too! The pastry tastes the best when made with homemade butter which you can easily make with double cream!

You can use this pastry to make a delicious peach tart as well if you’re looking for something sweet! If you use this- we recommend you refrigerate the pastry at least an hour before using then warm it to room temperature to make it easy to roll. If it’s too dry- add more ice water as well!

  • 300 grams flour
  • pinch salt
  • 1 tbsp sugar
  • 210 grams butter
  • 80-100 ml ice water


  • Add the flour and cubes of the butter to a mixing bowl then mix with the sugar and salt.
  • Once thoroughly mixed add the ice water slowly and keep mixing until it's at an optimal pie pastry state. Not dry and not wet.
  • Add to a board then roll out with flour above, under and on the rolling pin to the measurements of the pie dish you use.
