Onion and Bean Stew

Onion and Bean stew is a stew that uses onions, beans and celery for its base ingredients. It tastes delicious and I cooked it up as supplies were getting low! Its cost is really low and it’s a great use of leftover vegetables! Simply to make this a vegetarian recipe, replace the lard with olive oil. While replacing the beef stock cube with a vegetable stock cube.

You can also change the beans for any other- kidney beans are recommended for this recipe. Some extra spice can help as well around a tablespoon of cayenne pepper.

  • 1 cup soaked white beans
  • 1 whole garlic (diced)
  • 500 ml liquid stock (vegetable)
  • 1 stock cube (beef preferable, can be other)
  • 8 celery sticks (sliced)
  • 25 grams lard (or olive oil)
  • 4 whole medium/small onions (smaller preferable)
  • 2 tbsp oats

Onion Spices

  • 1 tbsp cinnamon
  • 1 tsp cumin


  • 1 tbsp basil
  • 1 tbsp parsley
  • 1 tbsp oregano
  • 1 tsp marjoram
  • 2 pinches salt



  • Dice the onions then add to a skillet. Brown then add the onion spices until they've incorporated. Add to side for use later.


  • Add the soaked beans with water then cook them for around half an hour or until its cooked. Then add the stock cube wait til dissolved then add the stock liquid and chopped celery. Add the oats.
  • Add the lard and the herbs together in a skillet on low heat then mix until they've combined. Add this mixture to the stew.
  • Add the garlic to the stew then keep on heat for a few more minutes. Serve.
