Leftover Vegetable Stir-fry

This leftover vegetable stir-fry is great for when you want to use up any vegetables that are leftover! It’s both tasty and filling! Especially when you’ve got vegetables that haven’t been used for a while and before they go mouldy or off. Saving every penny while making food that tastes awesome? Well, that’s what we go for!

It tastes great with a side of rice; though if you haven’t got any- we used oats. Though we believe that the stir fry would be great in a sandwich of onion bread! To make this recipe taste great we suggest that you use a lot of herbs and spices. We used oregano, sage and basil with a tab bit of cinnamon. Use different herbs based on the vegetables used and it’ll come out well!

Ingredients
  

  • 2 whole red onions
  • 1 whole garlic
  • 2 whole tomatoes
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1 tsp cinnamon
  • 1 tbsp sage
  • 1 tbsp olive oil or lard
  • 1 tbsp soy sauce

Instructions
 

  • Cut up the red onions into slices. Crush the garlic then cut them into dices. Chop up the tomato into dices as well.
  • Set the skillet to high heat and add the oil; once hot- add the onions then add the herbs then mix for a minute. Add the garlic and tomatoes then cook for a few more minutes.
  • Once everything has browned slightly; add the soy sauce. Then once its incorporated serve.

Apple Cake Crumble

Do you have any leftover cake that you really need to use? Well, we have a great recipe that you could use for that leftover cake! Crumble up those cake leftovers and mix them with butter and make a delicious apple cake crumble! Whatever flavour that cake had will transfer over to the crumble as well!

I was out of butter which is why it looks dry but it is still absolutely delicious!

You can make this recipe without the butter that you would use for the crumble, but it will “crumble” a lot if so. I had to go without butter due to having non in my pantry at the time of baking this recipe.

  • 1 Pie dish

Ingredients
  

  • 2 apples
  • 100 grams cake crumbles
  • 50 grams butter
  • 100 grams sugar
  • 1 tbsp cinnamon
  • 2 tbsp allspice
  • 1 tsp nutmeg
  • 1 pinch mace
  • 1 tsp ginger
  • 1 pinch salt
  • 1 tsp cornstarch
  • 2 tbsp water

Instructions
 

  • Preheat the oven to 180 C fan on
  • Cut up the apples into small slices.
  • Mix the sugar and spices together in a bowl.
  • Mix the apples with the spiced sugar in the bowl until its well incorporated then add to the pie dish

  • Mix the cornstarch with the cold water then add to the pie dish so that it can help add thickness to the crumble filling.

  • Mix the crumble and butter together rubbing it until its like breadcrumbs then add to the top of the filling to create the top.

  • Place in oven for around 35 to 40 minutes.
  • Enjoy and serve!
