Mysore Pak

We made this absolutely delicious mysore pak to test out our homemade ghee! It’s got the right amount of texture and sweetness! Using a ratio idea of the ingredients it’s as simple as:

  • (2) ghee
  • (2) sugar
  • (1) water
  • (1) besan gram flour
  • pinch of salt.

Basically, always use half of what you used for the ghee for the water and besan gram flour- and use the same amount of sugar for the amount you used for the ghee. Always use a pinch of salt to help add extra depth to the flavour. You can also add spices to increase the flavour as well- cardamon is commonly used.

Mysore Pak Recipe

Depending on how you prepare the mysore pak it will either take more time or less. We created our own ghee for this recipe but if your ghee is solid you will have to heat it up before you use it.

Make sure that you scrape the bottom of the pot while you cook it since you will get some of the flour burnings! We ended up with a few black parts on the pot!

Ingredients
  

  • 200 ml ghee uses the ghee from our ghee recipe.
  • 100 grams besan gram flour 1:2 in ratio of flour to ghee
  • 200 grams sugar 1:1 in ratio of sugar to ghee
  • 100 ml water 1:2 in ratio of water to sugar
  • 1 pinch salt

Instructions
 

  • Add the sugar and water into a pot then put onto medium heat until dissolved then set on medium-high to thicken into a syrup.

  • Add the freshly made ghee into the pot; stir fast.

  • Add the besan gram flour into the pot after a few minutes of stirring the ghee and sugar. Rapidly stir at medium-high or high-low heat.

  • When the mixture gets thick and gets darker- it's done. Pour onto a square tray lined with baking paper.

  • Enjoy and serve after half an hour to set!
