Prawn Spaghetti Bolognese

Prawn Spaghetti Bolognese is a delicious and fast-to-cook bolognese! It combines the seafood flavour with the delicious tomato goodness! Using simply herbs, the basic vegetables and prawns it takes absolutely no time to make this delicious meal!

We suggest that you use tomato pureé as well in this recipe after adding the chopped tomatoes. Sadly, I didn’t have any on me at the time of making this recipe- it had gotten mouldy!

You can also marinate the prawn as well if you want! It can be healthier if you use wholewheat spaghetti and more meat. You can also have pineapple tarts afterwards for a great meal plan!

  • 1 whole bellpepper
  • ½ eggplant (aubergine)
  • 1 whole garlic
  • 2 small-medium onions
  • 1 handful coriander (fresh)
  • 1 handful parsley (fresh)
  • any spaghetti The amount of spaghetti you use doesn't matter- I tend to use more than other people. Just take what you know you need and add a bit extra.
  • 3 cups water to cook the spaghetti
  • 1 stock cube
  • 1 tbsp cinnamon
  • 1 can chopped tomatoes

Dried Herbs & oil

  • 1 tbsp basil
  • 1 tbsp parsley
  • 1 tbsp oregano
  • 1 tbsp marjoram
  • 2 pinches salt
  • 2 tbsp olive oil

Instructions

  • Cook the spaghetti in a pot of water until its a third cooked. The hot spaghetti sauce will cook the rest so that it is not overcooked.
  • Chop the onions and bell pepper into dices then add them to a skillet then brown them. Add the cinnamon to the them after it browns then mix it in. Turn heat off when mixed.
  • Chop the eggplant into dices then cook it seperately on another skillet turn off when browned.
  • Add the eggplants to the onions and bell peppers. Add the canned tomatoes and olive oil and dried herbs then crush the stock cube then add. Add the prawns then stir. Keep cooking them for around 5-8 minutes on medium-high and make sure the prawns are cooked.
  • Keep on heat until the sauce has browned. Add spaghetti to the bowl (make sure its still quite wet) then the bolognese.
