This leftover vegetable stir-fry is great for when you want to use up any vegetables that are leftover! It’s both tasty and filling! Especially when you’ve got vegetables that haven’t been used for a while and before they go mouldy or off. Saving every penny while making food that tastes awesome? Well, that’s what we go for!
It tastes great with a side of rice; though if you haven’t got any- we used oats. Though we believe that the stir fry would be great in a sandwich of onion bread! To make this recipe taste great we suggest that you use a lot of herbs and spices. We used oregano, sage and basil with a tab bit of cinnamon. Use different herbs based on the vegetables used and it’ll come out well!

Leftover Vegetable Stir-fry
Ingredients
- 2 whole red onions
- 1 whole garlic
- 2 whole tomatoes
- 1 tbsp oregano
- 1 tbsp basil
- 1 tsp cinnamon
- 1 tbsp sage
- 1 tbsp olive oil or lard
- 1 tbsp soy sauce
Instructions
- Cut up the red onions into slices. Crush the garlic then cut them into dices. Chop up the tomato into dices as well.
- Set the skillet to high heat and add the oil; once hot- add the onions then add the herbs then mix for a minute. Add the garlic and tomatoes then cook for a few more minutes.
- Once everything has browned slightly; add the soy sauce. Then once its incorporated serve.
